If you haven’t yet discovered the beauty of make-ahead enchiladas, you’ve really been missing out! They’re a great meal prep dish for weeknights, as they can be composed well in advance and then just popped in the oven right before you’re ready to serve them. They’re also incredibly freezer-friendly once they’re cooked, making them a great option to make for friends and family who have just had a baby, experienced an illness or death in the family, etc., etc.

And what do I love most, in particular, about these Make-Ahead Breakfast Enchiladas? The fact that I can prep them and just pop them in the refrigerator the night before I need to serve a crowd in a hurry.

I don’t know about you, but our little one does NOT have the patience to sit around and wait hours for her first meal of the day, so these have been a fantastic option for us in the mornings when we have family visiting and need to get something on the table fast.

So let’s get into the details about how to make the only crowd-pleasing breakfast you’ll want to serve from now on:

How to Master Enchilada Prep

The first thing you’ll want to do is make your enchilada sauce. Sure, you can use store-bought [*affiliate link], but let me tell you, this was the first time I’d ventured into making enchilada sauce on my own and it was soooo easy. You should totally do it because you’ll never turn back. And most of the ingredients are things you’ll already have on hand in your pantry.

There are three other ingredients you’ll need to prepare before assembling your enchiladas:

  1. Shredded meat of your choice (I love buying the Trader Joe’s carnitas or making up a quick batch of my favorite Instant Pot Shredded Chicken.)
  2. Sautéed onions and peppers.
  3. Scrambled eggs.

Once you have the sauce and these three essential components ready to go, you’ll want to set up a big assembly line for all of your tortillas. The more space you have to spread out multiple tortillas, the faster the assembly process will go.

Now line up your tortillas and assemble away!

Fill your choice of corn or flour tortillas with the shredded meat, vegetables and scrambled eggs. Roll each one up tight and line them all up in a 9-by-13-inch baking dish sprayed with cooking spray.

Before tucking the enchiladas away in the refrigerator for the night (or into the freezer if you plan on serving them more than a day later), top them with your homemade enchilada sauce and plenty of shredded cheese.

Then cover, refrigerate (or freeze) and tuck them away until you’re ready to serve!

How to Feed a Crowd

The morning you’re ready to serve these yummy enchiladas, simply uncover the dish and pop it into a 350-degree oven for 15-20 minutes (more if the enchiladas have been frozen.) If you want to get the cheese on top extra brown and bubbly, turn on the broiler for the last five minutes or so.

Finally, you can’t forget the toppings! Be sure to top your breakfast enchiladas with plenty of fresh cilantro and avocado before dishing them out to your hungry crew.

This is the perfect breakfast for any time of year: summer mornings when you want to get outside first thing, busy school days when you have lots of hungry mouths to feed, or special holidays when your house is brimming with family and friends.

Ingredients
For the sauce:
  • 3 ounces tomato paste
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive or avocado oil
  • 2 tablespoons flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
All other ingredients:
  • 1 tablespoon olive or avocado oil
  • 1 bell pepper, diced
  • 1/2 medium onion, diced
  • 8 eggs
  • 8 medium tortillas (corn or flour)
  • 12 ounces shredded meat (carnitas, beef or shredded chicken)
  • 5 ounces shredded cheese (I used a mix of cheddar, fontina and jack)
  • Cilantro, for topping
  • Sliced avocado, for topping
Instructions
  1. First, make the sauce. Place tomato paste and broth in a medium saucepan over medium heat.

  2. In a small bowl, mix together the oil and flour with a fork, then add it to the saucepan with the tomato paste and broth. This will help thicken it.

  3. Add the remaining ingredients to the saucepan mixture and stir to combine. Bring to a gentle simmer, cooking until sauce thickens slightly, then turn down the heat to low to keep warm while you make the rest of the enchilada components.

  4. Spray a 9-by-13-inch baking dish with cooking spray and set aside.

  5. If you are planning on serving the enchiladas right away, preheat the oven to 350 degrees Fahrenheit.

  6. Place a medium saute pan over medium heat on the stove and add 1 tablespoon oil. Once oil is warm, add bell peppers and onions. Saute until onions are translucent and fragrant, then move the mixture to a separate mixing bowl.

  7. Using the same saute pan, scramble the eggs using the leftover oils and juices from the vegetables. Once eggs are cooked, remove to your other mixing bowl.

  8. Lay tortillas out onto a large prep space so you can assemble them all at once. Divide the vegetables, shredded meat and eggs evenly among the 8 tortillas.

  9. Roll each one up and tuck it into the prepared baking dish. It’s okay if they’re a bit snug.

  10. Once all of the tortillas are tucked into the baking dish, top them with the enchilada sauce, then with the shredded cheese.

  11. At this point, you can cover and freeze or refrigerate the enchiladas until you are ready to serve them OR you can bake them right away.

  12. When you’re ready to bake, place the enchiladas on a rimmed baking sheet (to catch any drips) and pop them into a 350-degree oven for 15-20 minutes. If your enchiladas are frozen, you may need closer to 30-35 minutes. To make the cheese on top extra-bubbly and brown, turn the broiler on for the last 5 minutes or so of baking.

  13. Once enchiladas are warmed through, remove from the oven and top with fresh cilantro and sliced avocado before serving.

Festive Guacamole with Cotija and Pomegranate

This Festive Guacamole with Cotija and Pomegranate is just the recipe you need to kick your guacamole up a notch. You’ll never want plain guacamole again!

Don’t get me wrong – I love me a good traditional guacamole – but when it comes to stepping it up a notch, what better way to do so than with salty, crumbly cotija cheese and tangy pomegranate seeds? (Okay, besides than with kimchi and bacon).

This recipe takes me back to my Napa days, and the one semi-classy Mexican restaurant (now defunct) that we had in our little ol’ town of St. Helena. It was a regular spot for us to take a long work lunch or meet up for an early Happy Hour, and one of the signature dishes was none other than a guacamole sampler, complete with three or so different spins on traditional guacamole. My very favorite spin – that I still think about now, over six years later – was the pomegranate and cotija version. So naturally, I had to try making it myself!

Guacamole is one of those classic party dishes for which you always need to have a good recipe up your sleeve. I’m now in a position where I’ve made it so much that I do it completely off-the-cuff without any sort of reference. BUT, I’ve made an exception for you, and when I whipped up this Festive Guacamole with Cotija and Pomegranate I made sure to write down every portion and ingredient so that you can now have your own go-to guacamole recipe on hand whenever inspiration (or a tailgate, backyard BBQ or 4th of July get-together) comes along.

It is, in most senses, a classic guacamole recipe, it simply gets dressed up with cotija cheese and pomegranate seeds at the very end. Don’t let the simplicity fool you, though, because its flavor meter is through the roof.

Cotija cheese seems to be fairly widely available at grocery stores these days (I found mine at Sprouts), but if you’re having trouble tracking some down, queso fresco would also be a great substitute.

This dish is fantastic as is, but if you’re so inclined you could also add some toasted pepitas at the very end to add a little extra savory crunch. Though it could easily be loaded into tacos, nachos or burritos, I find that Festive Guacamole is best enjoyed simply piled on top of fresh tortilla chips.

Who’s ready for a delicious, healthy one-pan dinner?? Meeeeeee!! Let me tell you, I’m all about the quick-and-easy meals these days. By the end of a long workday, all my eight month pregnant body wants to do is kick my feet up, watch TV and get a healthy, tasty meal brought to me in my brand new Pottery Barn Kids recliner. And if anyone wants to deliver this Healthy Shrimp and Poblano “Enchilada” Quinoa Bake to our door on any night of the week, we certainly won’t be complaining 😉

While we’re still working on the whole me not having to cook a thing part, the hubs has been great at at least helping out with dinner prep for the last few weeks. He’s a master at the grill, so we’ve been making most of our protein that way and then supplementing with either an easy salad or some sort of veggie. But every once in a while we crave something just a little fancier, and this quinoa bake is just the answer!

I can’t remember how it came to me, but a few weeks ago I suddenly got the urge to make some sort of Mexican-themed dish pairing shrimp and poblano peppers. I thought about it for a while, and wavered between making ACTUAL enchiladas, nachos or tacos. But then I thought about how NOT to complicate my life and instead make something that was (a) healthy and that (b) I could easily throw together and just pop in the oven. With the extra pop of protein it provides, a quinoa bake seemed like the perfect way to get the flavor combinations I was craving while also having a filling, delicious meal on hand in the refrigerator to heat up at a moment’s notice.

To be fair, if you count cooking the quinoa and making the cashew cream, this may not be considered a “one-pan dinner.” But, let’s be real, you really should have some cooked quinoa on hand at all times (meal prep Sunday anyone?) and if you haven’t yet tried your hand at cashew cream you are truly missing out on life. I’ve basically started using it in every recipe where I’m craving a creamy sauce and it is soooooo good you don’t even miss the cream. So here’s the scoop on how to make this life-changing Healthy Shrimp and Poblano “Enchilada” Quinoa Bake: First, make sure you have some cooked quinoa and cashew cream on hand. I recommend cooking the quinoa using vegetable or chicken broth to add an extra punch of flavor, and I’ve included my go-to recipe for cashew cream below for your ease and convenience (save it, make it, memorize it!)

After that, it’s just a matter of tossing all the ingredients together in a bowl, transferring them to a baking dish, topping with some cheese and popping the whole thing in the oven! The greatest thing about this Healthy Shrimp and Poblano “Enchilada” Quinoa Bake? It’s ready to devour in just 15 minutes!! Now that’s the perfect dinner if I ever saw one.

And, although the hubs and I EASILY polished off at least half of the bake in one sitting, I also love the fact that it reheats beautifully, which means this preggo mama can have a delicious, healthy, protein-packed meal or snack at a moment’s notice.

A healthier take on enchiladas featuring fresh shrimp and poblano peppers, a cashew cream sauce, cheese topping and plenty of flavor!

Ingredients
For the quinoa:
  • 1 1/4 cup dry quinoa
  • 2 1/2 cups vegetable stock
For the cashew cream:
  • 1 cup cashews, soaked at least 4 hours or overnight
  • 1 teaspoon nutritional yeast
  • 1/4 teaspoon salt
  • 3/4 cup water
For the quinoa bake:
  • 2 poblano (or pascilla) peppers
  • 1/2 teaspoon each cumin, chili powder, garlic powder, cayenne and paprika
  • 1/4 teaspoon salt, plus more to taste
  • Dash of pepper, plus more to taste
  • 10 ounces peeled and deveined shrimp, tails removed and cut in half (if large)
  • 4 cloves garlic, minced
  • 1/2 of an onion, chopped
  • 1 cup cherry tomatoes, quartered
  • 1 1/2 cups shredded Jack cheese
  • Cilantro and avocado, for garnish
Instructions
  1. Soak cashews in water overnight at least one night before you plan to make the quinoa bake. The next morning, drain the cashews and add them to a blender with the rest of the cashew cream ingredients. Puree until a smooth cream forms and set aside.

  2. You can also prepare the quinoa one day (or more) in advance of making the dish. Simply add the quinoa and vegetable stock to a medium saucepan, bring to a boil, reduce and cook for 10-15 minutes, or until all of the liquid has been absorbed by the quinoa.

  3. Once you have the cashew cream and quinoa prepped, the rest of the meal will come together in a flash. Using a gas grill or stovetop, hold each pepper with a pair of metal tongs and place over a medium flame until the skin is nicely charred. Remove from heat and destem and chop into bite-size pieces once cool enough to touch. Set aside.

  4. In a small bowl, mix together the cumin, chili powder, garlic powder, cayenne, paprika, ¼ teaspoon salt and dash of pepper. 

  5. Preheat the oven to 400 degrees Fahrenheit and get out a 3-quart baking dish.

  6. In a large mixing bowl, toss the shrimp with the prepared seasoning blend, then add the cooked quinoa, charred peppers, garlic, onion and tomatoes. Finally, add the entire batch of cashew cream you prepared in advance. Stir to combine. 

  7. Transfer quinoa mixture to the 3-quart baking dish and top with shredded Jack cheese. Place in oven and bake for 15 minutes.

  8. Garnish with fresh cilantro and sliced avocado and enjoy!

My cherry obsession is still going strong…I honestly can’t get enough! Do you ever obsess about a certain produce item coming into season so much that your list of what to do with it is about a mile long? Hi, yea, looking at me right here. This Cherry Salsa is just another in the long list of recipe ideas I’ve been dreaming about since cherries went out of season last year, and I’m so excited about the way it turned out!

I know I’ve been inundating you with the cherry recipes lately, so I can only hope that you’re enjoying these Cherry Bourbon Breezes and this Herbed Cherry and Ricotta Crostini as much as I am. If so, I’m confident that you’ll be totally digging on this Cherry Salsa as well.

It’s an easy recipe, with no cooking involved, that can easily be served up on its own as an appetizer or snack, or as a topping for your favorite barbecued meat (I have some juicy grilled pork chops in mind.) Or as those of you who love cocktails as much as I do may call it, Cinco de Drinko! I am beyond stoked to bring you today’s cocktail because (a) it is only the second frozen cocktail I’ve ever posted on the blog (second only to this delicious Frozen Cantaloupe White Wine Sangria, which would also be perfectly fitting for this occasion) and (b) it is the ultimate spring-summer hybrid, so perfect for this time of year! Yes, this Frozen Watermelon Peach Margarita I’m sharing with you today is so refreshing and tasty, you’re going to have to seriously pace yourself because you’re just going to want to be drinking these non-stop today and all through the weekend.

Unfortunately, seeing as I’m busy learning and hobnobbing with the big names at the Everything Food Conference in SLC today, I won’t be able to enjoy any of these for this festive holiday, but I’m sure I’ll be able to find some way to celebrate, and there will be plenty of time to enjoy a Frozen Watermelon Peach Margarita down the road as the weather gets even warmer in sunny California!

And since I won’t be making my normal rounds to all of the Mexican restaurants/bars with the hubs and his work crew this year, I’m dying to live vicariously through all of you. Tell me, what fun things are you up to today to celebrate? I’ll probably even be jealous if your plans amount to no more than making huge vats of Kimchi Bacon Guacamole and Spicy Homemade Salsa (and maybe some Frozen Watermelon Peach Margaritas?) and enjoying them in front of the TV in the comfort of your own home. So, about this Frozen Watermelon Peach Margarita, there’s really nothing genius about it, just a whole lot of really fantastic flavor. Now, I’m not one for frozen drinks that are made “frozen” by a heavy scoop of ice, as I find this just makes them incredibly watered down as they melt. Instead, I prefer to freeze my fruit (or any other solid ingredients you’ll be using) so it both makes the cocktail icy but also imparts a whole lot of flavor whether you drink it all right away or want to nurse it a bit (which is always a good idea with tequila!) That being said, I froze both the watermelon (seedless, mind you) and peaches before adding them to the blender with all of the other ingredients.

And speaking of “all the other ingredients,” we’re talking the classics that you see in just about every margarita recipe. So tequila, Cointreau and lime juice. Like I said, nothing fancy! I want to keep this as easy as possible for you so you have no excuse to whip some of these up because they are sooooooo tasty.

Throw all of the ingredients in a blender and pour into frosty margarita glasses. Maybe garnish with a lime wheel and/or give those glasses a salt rim if you’re feeling fancy (or need some sodium in your life…haha!) No judgment here. These recipes are for YOU.

  • 8 ounces frozen peach slices
  • 8 ounces frozen seedless watermelon chunks
  • 4 ounces tequila
  • 2 ounces Cointreau q

  1. If you like your margaritas with salt, rim two chilled margarita glasses with lime juice and salt before preparing the cocktails. Combine all ingredients in a blender and puree until smooth.
