5-Minute Pumpkin Curry Hummus

The classic Mediterranean dip is given some extra pizzazz with loads of curry and pumpkin flavor.

Ingredients

  • 1 15-ounce can garbanzo beans, drained and rinsed
  • 1/2 cup pumpkin puree
  • 1 garlic clove, peeled and minced
  • 2 teaspoons Madras curry powder
  • 1 tablespoon tahini
  • Juice of one lime
  • 3-5 tablespoons extra virgin olive oil
  • Salt & pepper to taste

Instructions

  • Add all ingredients except olive oil, salt and pepper to a food processor and pulse until mostly combined.
  • Turn the food processor on and slowly pour in the olive oil until it's reached the desired consistency. Season with salt and pepper and enjoy!
