- 1 15-ounce can garbanzo beans, drained and rinsed
- 1/2 cup pumpkin puree
- 1 garlic clove, peeled and minced
- 2 teaspoons Madras curry powder
- 1 tablespoon tahini
- Juice of one lime
- 3-5 tablespoons extra virgin olive oil
- Salt & pepper to taste
Add all ingredients except olive oil, salt and pepper to a food processor and pulse until mostly combined.
Turn the food processor on and slowly pour in the olive oil until it's reached the desired consistency. Season with salt and pepper and enjoy!
