Easy Mango Salsa

This easy salsa comes together with just six ingredients and in less than 10 minutes - no cooking required!

Ingredients

  • 2 mangoes peeled and finely diced
  • ¼ red onion finely diced
  • 1 jalapeño finely diced, remove seeds and ribs for less spice
  • Juice of 1 lime
  • 1/3 cup chopped cilantro
  • 2 cloves minced garlic
  • Salt and pepper to taste

Instructions

  • Combine all ingredients in a medium mixing bowl. Stir to combine.
  • For best results, let sit at least one hour, but can be eaten right away if needed.

Notes

  1. To make the salsa mild, omit the jalapeño OR remove the ribs and seeds from it before dicing.
  2. To make the salsa spicy, keep the seeds and ribs and/or add another jalapeño.
  3. You can make this recipe 1-2 days in advance and store in an airtight container in the refrigerator until ready to serve.
  4. Serve with tortilla chips, alongside guacamole, over fish tacos, as a topping for grilled chicken breast, or stirred into a bowl of quinoa.
