Pineapple Mojito Popsicles

Boozy and refreshing, these popsicles are laced with fresh pineapple, mint, lime and, of course, rum!

Ingredients

  • 1 pineapple diced (the one I used was 1 pound, 6 ounces)
  • ½ cup mint-infused simple syrup recipe below
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1/3 cup white rum

Instructions

  • Combine all ingredients in a blender. Blend on medium speed until ingredients are combined and a bit frothy.
  • Pour mixture evenly into popsicle molds, being sure to leave some extra space at the top for expansion and easy removal from the mold.
  • Place molds in the freezer for at least 8 hours (or overnight.) Remove from freezer and carefully pull popsicles out of molds.
  • To store, lay popsicles flat in a large resealable bag and place back in the freezer until ready to serve.

Notes

To make Homemade Mint-Infused Simple Syrup: Combine 1 cup water, 1 cup sugar and 10 fresh mint leaves in a small saucepan over medium high heat. Bring to a boil. Reduce to a simmer and stir until sugar has dissolved. Remove from heat and let cool. Remove mint leaves before using.
