For the marinated cucumbers:
- 1 Persian cucumber sliced
- ¼ cup St. Germain elderflower liqueur
For the cocktail:
- 6-7 slices of the marinated cucumber
- 3 fresh mint leaves
- 2 ounces vodka
- ½ ounce St. Germain or other elderflower liqueur
- 3 ounces cucumber-flavored or plain soda water
First, make the marinated cucumbers. Simply place the cucumber slices and St. Germain in a small Tupperware, shake to coat, and place in the refrigerator for at least 30 minutes, or up to one day.
When ready to make your cocktail, combine marinated cucumber slices, fresh mint, vodka and St. Germain in the bottom of a rocks glass and muddle to release all of the flavors.
Top muddled ingredients with a half of a glass worth of ice, then top with seltzer water. Give a gentle stir to combine all of the ingredients and enjoy!
- If you don't want the extra punch of the marinated cucumbers, feel free to skip this step.
- If you can't find cucumber-flavored seltzer water, feel free to sub in another flavor that would pair well, or just use unflavored.
