Secret Sauce: The Ingredients

Before you embark on your Pink Latte-making journey, you’ll want to stock up on the following ingredients:

Beetroot Powder

TBH, I had never heard much about beetroot powder until my mom and I ran into a talkative soul in the dairy section of the supermarket a couple of months ago. The conversation started with him telling us just HOW good Kerrygold butter is (which, duh, we already knew – it’s the best!) for bulletproof coffee, but then he segued into his entire health history and why he now turns to beetroot powder for his daily energy instead of coffee. Sure, it was TMI, but it got me thinking about what the bright red little superfood could do.

After doing more of my own research (because, hey, you can never be too sure about those rando’s you meet in the grocery store) I learned that beetroot powder does, in fact, have many health benefits including, but not limited to: increased endurance, improved brain and heart health and reduced exercise recovery time.

The cherry on top? You can easily order beetroot powder on Amazon [*affiliate link] or just pick it up at your local Whole Foods or health food store.

Dried Rose Petals

Rose petals are another great superfood that you don’t necessarily think of when you want to make a power-packed drink, but you should! Not only do they lend a beautiful floral taste to whatever you use them in, but they also pack many health benefits, including: enhanced mood, help with digestion and pain relief, among other things.

You can also order culinary-grade dried rose petals on Amazon [*affiliate link] or you can find them at your local health food stores.

Aside from these two special ingredients, I’m willing to bet you already have the only other two ingredients you need already on hand: milk of your choice and honey!

Energizing Pink Latte, Comin’ Right Up!

Okay, now you know what you need, time to make this tasty latte in three easy steps:

The first step is to make our rose simple syrup, which is done by boiling together honey, your dried rose petals and some water until reduced.

The next step is to whisk together the beetroot powder with your choice of milk and then heat it up. You can use either a milk frother for this (if you have one) or simply place the milk in the microwave for 1-2 minutes.

The final step is to assemble your drinks. This recipe makes two lattes, so be sure to recruit your hubby, partner, friend or roommate to enjoy one with you. Then you simply pour the syrup into your cozy coffee mug and top with the warmed milk and drink up.

  • 1 cup water
  • 2 tablespoons culinary-grade dried rose petals
  • 2 tablespoons honey You may reduce this amount if you don't like too much sweetness.
Other ingredients:
  • 1 cup milk of your choice I like almond or oat milk.
  • 2 tablespoons beetroot powder
Instructions
  1. Combine water, rose petals and honey in a small saucepan. Bring to a boil and simmer until reduced by about half, stirring occasionally. Remove from heat and set aside.

Bourbon-Spiked Pumpkin Spice Latte (No Sugar Added!)

The ultimate Thanksgiving treat!

A couple of Bourbon-Spiked Pumpkin Spice Lattes are the perfect treat for the holidays!

Because every pumpkin spice latte deserves a little bourbon in it for a long holiday weekend. Am I right? Seriously, though, I don’t know why I didn’t think of this before. Yes, me, the queen of spiking my coffee with Bailey’s and enjoying hot toddies like my OG favorite, Boilo. It only makes complete sense that we should dress up the annual favorite espresso drink with a little sumpin’ sumpin’, and bourbon sure fits the bill!

Annnnndddd, we’re making this Bourbon-Spiked Pumpkin Spice Latte CaliGirl Cooking-friendly by using only REAL pumpkin and spices…none of this super-sweet syrupy stuff you get at your neighborhood chain coffee shop (not gonna name names here.)

A Bourbon-Spiked Pumpkin Spice Latte will spice up any holiday get-together!

That’s right, this five-ingredient recipe contains no added sugar, so it can basically be called a health food (save for the bourbon of course, which I suppose you could leave out if you really want to be SUPER healthy, but where’s the fun in that?) So here are those five ingredients we’re looking at:

Espresso
Pumpkin purée
Bourbon
Milk of your choice
Pumpkin pie spice
And, if you’re feeling fancy, a sprinkle of cinnamon and/or cinnamon stick to garnish

Pretty easy, right?

This Bourbon-Spiked Pumpkin Spice Latte has been largely responsible for keeping me out of the coffee shops that become so addicting with their “red cups” and special holiday drinks this time of year (well, that and the fact that I have a three week-old on my hands :-P) It’s creamy and delicious, with a wonderful pumpkin spice flavor that won’t leave you with a sugar hangover. Let’s leave that to all the pie and other fancy desserts we’ll be indulging in this weekend.

If you don’t have an espresso machine, feel free to just use a little bit of regular coffee as the caffeine source for said Bourbon-Spiked Pumpkin Spice Latte. It won’t be quite as potent, but who needs tons of caffeine on a lazy holiday weekend, anyway?

This Bourbon-Spiked Pumpkin Spice Latte has no added sugar and is made with REAL pumpkin!

Speaking of the holiday weekend, what are your plans? We are headed up to NorCal tonight to spend the long weekend with our families, and it will be Raia’s first long car trip. Any tips or tricks on how to make it through a four-hour drive with an almost one-month old? So far our plan is to just take our time and have no expectations about when we’ll get there. Hopefully that relaxed attitude about it all will make the trip a breeze!

We’ll be spending Thanksgiving day with my husband’s family, then heading over to Santa Cruz to see my family on Friday, with a stop to cut down a Christmas tree in between. The hubs and I have been cutting down our own tree every year since we started dating, so we’re very excited to continue the tradition with the newest addition to our family.

Other than that, we plan on doing lots of relaxing, eating and I’m sure watching allll the football, which means we’ll have plenty of time to whip up some tasty Bourbon-Spiked Pumpkin Spice Lattes while we’re at it. Who else is with me?

A Bourbon-Spiked Pumpkin Spice Latte is the perfect treat for fall festivities.

Happy Thanksgiving, friends!

*Programming Note: I’ll be taking a break from posting on Friday so we can really enjoy the weekend with our family and friends. I’ll be back in action on Monday and can’t wait to tell you all about our trip! Xo

Matcha Macadamia Latte

Today I present to you one of my newest favorite things!

This Matcha Macadamia Latte is an easy alternative to coffee, and so delicious!

Matcha Macadamia Lattes have completely stolen my heart, and I’m not one bit upset about it.

It’s no secret that nut milks have become one of the hottest food trends over the past decade. They’re now mainstream at Starbucks and often the main form of calcium and protein you’ll find in any semi-health conscious person’s kitchen. In fact, you might be hard pressed to find a gallon of regular milk in anyone’s refrigerator these days.

While the hubby and I are certainly not lactose-intolerant, we keep a stash of unsweetened vanilla almond milk on hand as our main “milk” source for two primary reasons: (1) We love adding it to our morning Power Protein Smoothie and (2) It is shelf stable until opened and keeps much longer than regular milk, so we don’t have to worry so much about spoilage.

Almond and cashew milks have proven to be the reigning stars of the nut milk world, but on our trip to Kauai this past July, I ordered a Macadamia Latte and was soooo excited to learn that no, it was not flavored with overly sweet macadamia nut flavored syrup, but it was in fact made with macadamia nut MILK. I knew I had to get my hands on some as soon as we got home, and get my hands on some I did. I found this Milkadamia brand on Amazon, and also discovered that our local, slightly more “upscale” grocery store stocked the same brand.

A Matcha Macadamia Latte made with Milkadamia, available on Amazon!

Since we don’t own an espresso machine (yet), I started out by adding it to my regular ol’ cup of half-caf joe in the morning in lieu of creamer, but I was still craving more of that macadamia flavor. I started brainstorming how I could make my latte without an espresso machine, and remembered that I had a stash of matcha in the pantry alongside a brand new matcha whisk. I immediately knew what I wanted to do with my macadamia nut milk and I had to do it ASAP!

Really, though, this is another “recipe” that could almost not even be called a recipe. We’re talking three ingredients that even the biggest novice in the kitchen could throw together. But it’s way too good not to share! Seriously, get yourself on Amazon right this instant and order the ingredients (and maybe a matcha whisk, because we’re trendy like that) so you can whip up a Matcha Macadamia Latte STAT. You will most definitely not be sorry (and your Instagram feed will look fab as well.)

Whip up this easy Matcha Macadamia Latte with macadamia nut milk, matcha powder and a matcha whisk!

So aside from making Matcha Macadamia Lattes all day every day this weekend, what else have you got planned? We’re taking it easy with a quiet Saturday at home, then we’re headed to Ojai on Sunday for a quick overnight stay – our last little getaway before baby comes! We won’t have too much time there but are trying to squeeze in as much as possible. Any suggestions for what we should do or, more importantly, where we should eat?

Have a great weekend, friends!
